Christmas Red Cabbage

Red Cabbages often appear in a veg-box this time of year or they may be coming thick and fast from the vegetable plot. They are packed full of anti-oxidants and make for a colourful and healthy side dish to have with your Christmas meal.

If you are used to this reaction when you try serving up cabbage then try the recipe below – it might just work!

Ingredients

 

½ Large Red Cabbage or 1 small

Large Pinch of Nutmeg

Black Pepper

½ Glass of Red Wine or ½ Glass of Apple Juice

Tablespoon of olive oil, low fat margarine (one which is suitable for frying) or butter

 

Method

 

  1. Shred the cabbage
  2. In a saucepan slowly simmer the cabbage in the oil or butter/margarine.
  3. Once it has started to soften pour the wine or apple juice over the shredded cabbage
  4. Simmer on a low heat for around 7-15 minutes until the cabbage is soft but not soggy adding more water if necessary
  5. Add the pepper, the nutmeg and the margarine/oil and cook for a further minute
  6. Serve as a side dish with Christmas meal

    I think you should change the recipe to 1.5 glasses of red wine. One to drink while cooking, one to put in the recipe.
