This is a healthier alternative to chips. They are easy to make and are a great accompaniment to Paul’s Vegie Burgers.
Serves 4
4 Big Potatoes or 8-10 New Potatoes
Half a Teaspoon (To Teaspoon and a half depending on how spicy you like it) Each of -
Chilli Powder
Coriander Powder
Cumin Powder
Paprika Powder
Teaspoon – Tablespoon of Turmeric
Pinch of Salt
Pinch of Black Pepper
Wash the Potatoes but don't Peel them
Parboil until slightly soft (5-10 mins)
Meanwhile mix the spices in a bowl
Coat the Potatoes evenly in the spice mixture, the turmeric acts as a bulking agent and for colour and helps evenly coat the potatoes with the spice mixture
Drizzle with olive oil
Place in an oven on gas 7 or 425 F 220 C for around 15 minutes or until potatoes are crispy and golden brown
Serve with Paul’s Veggie Burgers. Tomato Salsa and a Grin
1 Tin of Tomatoes or 4-6 Fresh Tomatoes
1 Chilli or a big pinch of chilli powder
Half a large onion or one small or 3 spring onions
Few drops of Balsamic Vinegar or Nasturtium Vinegar
Chop the Chilli and Onion and fry in a little oil until they soften
Chop the tomatoes and add them to the pan
Drizzle a few drops of the vinegar into the pan continue to heat for another 2-3 minutes
Liquidize if necessary
Serve with burgers and wedges
