Jacks Tomato soup

Ingredients

2 tins tomatos
1 tin cannoloni beans
1 large onion
3 or 4 sticks of celery
3 carrots
3 large potatoes
chilli or chopped herbs
1 3/4 pints of veg or chicken stock
tomato puree
seasoning to taste.

 

Method/Procedure

Chop onion ,celery,carrots and potatoes and put in large pan with a small amount of oil.saute for a couple of minutes ,stirring.

Add tomatoes ,puree and stock. Bring to the boil and then simmer for about 20 minutes until all the vegetables are soft. Put into processer and whoosh up as smooth as you wish (I like to keep it quite chunky). It you do not have a processor then you can use a potato masher.
Add chillis or herbs , beans and seasoning ,return to pan for a few minutes to heat through.

You could try experimening with this recipe as it can be made with any other vegetables that you might have around.
 
Serve with chunky bread.
