you can use apple for added pectin esp crab, however i use lemon juice. It is very good as an accompinement to game dishes esp Venison.
Sometimes i often mix with elderberry too. :?

elderberry cordial and rowen jelly

Bizzare season it might be for fruits, berries & fungi. Today for example i was picking elderflower and ripe elderberries from the same tree.
Made first large batch of elderberry cordial and rowan jelly. :?

Blackberry cordial

Has anyone ever attempted to make a blackberry cordial that is none alcoholic and would be good for a refreshing summer drink if diluted with iced water. If so would appreciate any recipes.

I get asked a lot for meadow sweet by a number of chefs to make ice cream and sorbets with.
The best way as i remember is to ifuse the herb in with the syrup or cream.
One of the sweetest herbs known to man.

If you dso see plenty of hazel trees with grey squirrels hanging around shoot the little bastards and eat them. After all they are vermin and taste good.
Don't be all airy fairy and go ahhhhh poor little squirrel either. Think of the damage they do.

I was wondering when someone would mention ground elder. Do not be suprised when i say that it is delicious to eat particularly when it IS young.
