had some carcasses and trimmings, feet etc from the chicken cull so decided to make some brawn
Threw in a salted pigs trotter i had in the brine barrel
A bit sloppy and quite insipid
Any seasoning tips
i used garlic, parsley, thyme and pepper

If the taste is predominately porky,crush some fennel seed and try that.I don't eat,or cook,anything that's had feathers,but er indoors tends to use a lot of rosemary with chicken etc.
