Interested to hear how people deal with Gluts of Eggs?

I will start with a few of mine

1 Pancakes for breakfast
2 Omlettes for Tea
3 Sponge Cake for Pudding
4 Bread & Butter Pudding with Real Custard
5 Fried Egg Sanwiches for Lunch
6 Boiled eggs for breakfast
7 Whites Marangues Yolks Choc pudding / mouse
8 Pickled Eggs
9 Incubate for chicks
10Throw at OH.

All delicious, but isn't such a concentrated egg diet VERY constipating? :pale:

12. Scrambled with bacon
13. Give to friends (which we regularly have to do)

20. I chuck my excess duck eggs in the bin when they pass the 10 days mark.

22.Pancakes...good for when you have a glut of lemons or soft fruit
23.cakes ...I have recipes that use loads! when we have enough cakes I swop them for veg with the neighbours

Spanish-style frittata needs quite a lot of eggs.
And you can basicly throw in anything that sounds good, like leftover chicken,chorizo sausage,bacon,
onions,greens and peppers etc.

I'm definatly a pickled eggs girl. I'd never heard of them till I moved to the NE and our lad proudly served me one up on a fork dipped in salt. The look he got! But it was DIVINE! I now go nuts for them, so, pickle em all!
