nut roast recipe?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

nut roast recipe?

i went to a organic cafe today and had a nut roast,it was delicious,when i asked what was in it among other things she said quinoa and indian spice,now i`ve never cooked quinoa but as i`l give most things a try i bought some organic quinoa from the market,how do i cook it?and does any one have a recipe for nut roast?

Quinoa is usually cooked in the same way as rice (or it is in my house!). 1 measure of quinoa, 2 of water. Bring to the boil in a pan, cover, reduce heat and simmer - takes between 15/20 mins.
I've never used it in a nut roast though....

Try this one!

I use pine nuts or cooked chestnuts as I'm now allergic to the usual range of nuts but you can substitute more or less whatever combination of ground and chopped nuts you like and it will taste good.

1 tbsp olive oil
2 sticks of finely sliced celery
1/2 small green pepper, finely chopped
125g rinsed quinoa
1 Veggie Oxo or similar
125g grated carrots
125g of ground pinenuts
50g chopped pinenuts
50g sunflower seeds
2 tbsp brown rice flour or oat flakes

Heat the oil in a pan and add the sliced celery. Lightly fry for 5 minutes.
Add the quinoa and 2 1/2 cups of water with the Oxo. Simmer until most of the water has been absorbed.
Add the rest of the ingredients and cook until you have a thick mixture. You may need to add extra water if it seems too thick.
Press well into a lined 2lb loaf tin and bake for 40 minutes at 180C/gas mark 4.
Growing old is much better then the alternative!

I made this for Christmas and it was fantastic. I'm not normally a nut roast fan but we have a lot of nut trees and Christmas has to be entirely homegrown in my house. I made double so we had it for a few days after (in sarnies, stuffed in cabbage leaves baked in tomato sauce, stuffed in peppers with some ebly (or any other grain) and mozzarella, and made into non-meat balls with tomato sauce and spaghetti.

Vegetable Nut Roast Recipe

1/3 cup Butter or margarine
1 cup Chopped mushrooms
2 large Onions, finely chopped
1/4 cup Chopped green bell pepper
3 cup Grated carrots
1 1/2 cup Chopped celery
1/2 cup Sunflower seeds
3/4 cup Coarsely chopped walnuts
5 Eggs, beaten
3 cup Whole wheat bread crumbs
- (soft)
1 d Dried basil
1 d Dried oregano
Salt, pepper


Melt butter, add mushrooms, onions and green pepper and cook until tender but not browned. Combine mushroom mixture in bowl with carrots, celery, sunflower seeds, walnuts, eggs, bread crumbs, basil and oregano. Mix well. Season to taste with salt and pepper.

Line loaf pan on bottom with waxed paper, then grease paper and sides of pan generously. Turn mixture into pan and bake at 325F 1 hour. Turn out and carefully peel away paper.
