Leftover Chicken Recipes
Just a simple request really, I was given a HUGE Chicken by my Husband's Gamekeeper friend "You've got kids he says"
I'm not sure how much he thinks a four yo and two yo old eat - but there you go!
I've cleavered it in half, frozen one half and roasted the other, I made a lovely creamy gluten free pie with the larger pieces of meat yesterday.
I've boiled the carcass and picked the meat off the bones, theres tonnes still left, I've made half of it into soup, and what I'm really getting at (why does something straightforward always take me so long?! )
is does anyone have any good recipes for these leftovers. I would ideally like something suitable for the slow cooker as I will be working for the next two days and prefer to chuck in the food in the morning and come home to something cooked (don't we all? )

Something like a chicken laksa might be the ticket, although it's not really one for the slow cooker. Quick and easy though.

My fave chicken slow cooker recipe, simple but lush
whatever chicken you have
carrots
onions
tomatoes- normally tinned 1 or 2 tins
pearl barley- a good shake out of the packet
a good amount of garlic- however much to your taste
handful of your favourite herb, I use sage but it works just as well with others
enough chicken stock to cover the whole lot
when you get home from work a little flour to thicken it if necessary and I would serve it with mash
yum

Not much help if you have tons of it to use up, but I use up all the bits picked off the bones by turning it into chicken paste for sandwiches.
Just whizz in a food processor, add salt & pepper and moisten with some tasty stock.

chicken risotto,
serves 4
cals per portion 390.
(with cheese)
2 oz butter or marg,
1 med onion,chopped
1 clove garlic,finely chopped,
1 large stem of celery,chopped
4 oz rice
6 oz diced cooked chicken
1 pint chicken stock
pinch dried rosemary
4 oz peas
3 oz parmesan,cheese(i omit this as dont do dairy)
oven temp 200 c
melt butter in large pan,add onion,garlic,celery,cook for about 3 mins,
add rice and chicken and cook on for 3 mins,add chicken stock, salt and pepper to season,and rosemary.
bring to boil,cover and put in oven add peas and cheese,cover again,bake for about 5 mins,when done the rice should be cooked.
cooking time about 20 mins,prep time about 12mins
serves 4

ooh odsox that sounds nice, I do sort of the same with chicken and mayo never thought of stock

I quite like a chilli with left over chicken too, lots of different beans not just kidney, cooked slow (for me overnight in the Rayburn).
And of course - chicken noodle soup - just what is needed for getting over colds and flu in the winter.
And stew - all those old wrinkled veg in the bottom of the basket dumped in and left to cook with some stock, and finished with some dried herbs - I like tarragon or chervil with chicken.
Getting hungry now just thinking about it.

Sautee onion and garlic with some chopped up mushrooms
Add tomatoes - tinned or fresh to make a tomato sauce
Season with lots of oregano and black pepper
Add cooked chicken and heat thru
stir in some cream or creme fresh
Serve with pasta
Oh and there's also chicken stroganoff - similar to above but use lots of paprika instead of oregano and pepper

I don't have the leftover problem - I have a poodle who will do anything (even behave) for leftover chicken.
