Sure - all the elderflower sorbet from scratch recipes are too much work. I make it from my own elderflower cordial as follows:
* Mix 165ml elderflower cordial and 300ml of water and cool until half frozen.
* Remove from the freezer and beat until soft.
* Beat 1 egg white until stiff and add to the softened cordial/water mixture. Refreeze until firm.

The more frequently you can be bothered to take it out and beat it, the smoother the sorbet will be. If you really cock it up and it comes out granular, call it a granita

Yummy, another one for my new(ish) ice cream maker! I haven't tried making a sorbet yet. Actually it might be easier just to make elderflower cordial ice lollies.

Oh good lord, it's that time already, isn't it? I haven't got around to bottling last year's elderflower wine yet. I think I may have to just buy more DJs...
