We have been away at a wedding all weekend so when we got back I was craving something healthy to counteract all of the nice but naughty stuff we have eaten. I cut up some courgettes, new pots, tomatoes, onion and flat leaf parsley (mostly from the garden), garlic and some chorizo. Put it all in a frying pan with a little oil, fried it off then added water and seasoning and the rind of some parmesan. Twenty minutes of gentle simmering later and we had a really lovely hash-come-stew thing which was warm but still managed to feel fresh and summery because of the tomato. Mmmmmmm.

I took my River Cotage Edible Seashore book to the beach yesterday and gathered some sugar kelp and some gutweed. Tried to make chinese crispy seaweed with the gutweed but i didn't rinse it well enough and it was REALLY sandy! :pukeright: Ah well, I'll try harder next time!
Just waiting for the kelp to dry so i can try kelp crisps, but i think it might be a bit sandy too..... :?

the folks and sibs went off on hols to today. i get the peace of an empty house( and the animals to feed ) ! so i had to make them some meals to take in the cool box the list was one chicken and veg curry , on chicken ham and leek pie , some pasta sauce, one choccy cake and one lemon drizzle cake and i made a roast for dinner while they packed ! good job i like being stuck in the kitchen ! :salute:
and i had a go at yoghurt making the other day. eeek i love the stuff cant believe its so simple :cheers: !

I made a batch of courgette pakora / bahjees ...grated courgettes and onion stirred into a thick batter made with gram flour & spices, then deep fried. Made a great starter to keep the folks from complaining that dinner took longer than I anticipated (I forgot to defrost the fish!!) :roll: Added bonus of using a lot of the courgette that had transformed into a marrow overnight! :thumbright:

Ruth, can I ask what spices you used in the courgette pakoras? I have gram flour and fancy having a go!! thanks in advance! pbf.

I had a pack of massala spices, ready blended; it has coriander, dill, chili, cumin, cardonam, pepper salt fennel, ginger, bay cloves,cinnamon star anise, caraway, nutmeg and mace!! I would use any "cuury" type spices if I did not have that in the cupboard!! :mrgreen: I use some SR flour with the gram flour one egg and enough milk to make a thick batter. But I have done it many times and do it differently each time...very forgiving recipe cos no-one knows what it is meant to be like!! :iconbiggrin: I found it best with lots of courgette so that there is less batter. They have come out like fritters before when the batter was too thin!

Tonight we had a Sunday dinner where everything except the chicken was grown by us - the french beans, brocolli, swede and carrots all came from our raised bed, picked 30 minutes before cooking. The potatoes were our Arran Pilots from the sacks in our back yard. I'd forgotten how much better everything tastes when it's so fresh. Carrots that actually tasted like carrots when I was a child!

Dug up some potatoes today and amongst the decent spuds had a good handful of very small, pea-sized ones. Not wanting to waste them I put a couple of pieces of haddock in the smoker for a generous session and made Cullen skink which went really well with fresh-baked bread and a small picking of French beans.

Mmmmm it's all lovely what you are all eating, and we are eating tons of salady things and had a roast using our 2nd earlies which surprisingly roasted really well and were lovely and fluffy inside!
