Thanks Ruth, my pakoras were really good, I had to make them twice as not enough spice the first time! I have so many good tips now that I don't want to give courgettes away any more! pbf,

We use them as noodles for spaghetti. Just do a long long julienne and cook them in the pot with olive oil and salt for a few minutes, not long because you want them al dente. Then put marinara over the top with parm or romano! The kids actually love it because they feel like they're getting spaghetti!
It is a mistake to think you can solve any major problems just with potatoes.

Hey thats a great idea! Our "spaghetti" will be short as I use the grater!! Got veggies coming for dinner next week, I think we will start with pakora accompanied by salad with courgette and carrot coleslaw, then spaghetti or au gratin for main, accompanied by courgette bread rolls...now what can I do as a desert??? If it goes down well I can give them a marrowette to take home

I cut my marrows (which would have been courgettes but for the fact that we had a storm on Sunday night and they just exploded yesterday), start again - I cut my marrows into rings, stuffed them with some random left overs from the freezer, beef stew I hope, added a bit more water then shoved them in the oven for an hour to cook.

We have a glut too. Can't seem to eat them fast enough, despite putting them in almost every meal.
My favourite is OH's chocolate courgette cake. It's from a Green & Blacks recipe book but seems to work fine with really cheap supermarket chocolate. Does that mean I can count cake as one of my five-a-day? Goes well with raspberries and cream or just by itself with a mug of hot coffee.
The smaller courgettes taste better then the marrowettes, so I've now take to cutting them before the get too big, although I'm not always quick enough. They do seem to keep quite well once cut.
Other than OH's cake my favourite is to slice them and sprinkle a little salt over. Leave to stand for 30 min and wipe off the moisture that the salt draws out. Then griddle them on each side for a couple minutes and then douse them in a mixture of olive oil, lemon juice and oregano. Serve hot or cold.

Can you post the recipe for the chocolate courgette cake? I would love to see that!
Another thing we're doing is slicing them very very thin, dipping them quickly in some kind of marinade (soy sauce, curry powder, just salt) and then dehydrating them. Some we are dehydrating plain and those can go into soups in the winter. The others we may give to friends over the holidays as packages of crisps. We have been running the dehydrator almost every day to keep up with the production of our three plants, but we will have a lot of crisps to give away for the holidays!

i made courgette and walnut cake
also we are having courgette bhajis pretty often at the mo
getting about 8 courgettes a day... lots in freezer, just sliced and blanched.. they are good to chuck into casseroles/curry/stew/chili etc

This is the way OH makes hers...
175g dark chocolate (cheap value brand is good)
250g finely grated courgettes (skins and all)
1 tsp baking powder
1 tsp bicarbonate of soda
1 tsp ground cinnamon
100g castor sugar
175ml sunflower/veg oil
2 medium eggs
Grate the courgette into a bowl with the dry ingredients. Beat together the oil and the eggs and then stir in to the mixture. Finally melt the chocolate and stir this in.
Pour mixture into greased loaf tin and bake for 50 to 60 mins at 180C. Leave to cool. Eat.

Search for courgette cake on the forum as there's a great recipe been discussed (and made!) over the years.
I don't have time to process (soup/cake) any courgettes at the moment so they are either being composted or given away. Can't even eat them as the MIL is here and she'll
Edit: she is eating and LIKING my French beans after having tried them once from a supermarket and said "I don't like that" (her favourite saying). She doesn't like a lot of things so this is an incredible breakthrough!
