Do you need to sterilise demijohns if you are making slow gin, or just clean them and let the gin do the job? I didn't sterilise anythign last year and it all seemed OK .....

One omore thing, does it really matter what I use as a stopper as the demijohns I have don't have corks- bit of greaseproof with a rubber band I was planning???

Sterilize everything! why risk losing the whole batch? The alcohol content might be enough to get away with it with sloe gin but I'd still sterilize just to make sure. They may not have sterilized everything in the past, but I bet they drank a whole lot of vinegar! As far as a stopper is concerned you can use anything that will be CO2 permable, so muslin, cotton wool I've used both in the past and they've been fine.
