Nutritional Value of Jam?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I recently read a book called First Catch Your Eland, by Laurens van der Post. He grew up on a Boer farm in South Africa when they had no choice but to be self sufficient, and he describes them making jam in industrial quantities over the summer to tide them over the winter. Apparently Africaaner cookery is still very jam oriented.
It's a fascinating book generally, by the way - Laurens van der Post travelled all over Africa for years, and he describes food from all the different cultures he came across.
