Home made cheese and cheese spread

I am going to have a go at making one hard cheese and a soft cheese while i have a week of work, only trouble is i don't really know how. I have read that nettle juice can be used as a rennet substitute for a vegetarian hard cheese but not sure how to make the cheese in the first place.

Over the next year i want to learn as many new skills as i can to make me as self sifficient as possible. I think things like cheese making along with yoghurt are very usefull skills so any advice anyone can give me will be very much appreciated.
