Birch sap beer

Post: # 200767Post Nana Caz »

G'day!

[Just practising cos I'm off to Oz in 4wks 5days and 5hours - not that I'm counting you understand.] We've made the most delicious tasting birch sap wine - a little was accidentily swallowed at the first racking  - and still have approx 7 litres in the freezer. We froze it as soon as we got back home with it.

CCJ Berry says that it also makes a rather nice beer using less sugar...marvellous except for one small detail - no recipe! Don't think I'm all that thick now [ref purely to homebrew] so am I missing the obvious or should I have a crack at a "basic" beer recipe? IS there such a thing? Also, I had a look for some hops; wow...is there ever a lot of choice! What would I use? I'm guessing it would be a light beer - poss pils? Not a beer drinker so don't really know.

Anybody made some? If no joy, then we're going to have to suffer some more wine...don't believe in wasting anything.
