cider flavour advice

Hi,

Just been testing my homebrews :drunken: and the second batch of cider while definitely boozey has little flavour, does anyone have any advice on how to oomph up the flavour or I guess how to use it to make other boozey drnks?

this is one for stoney probably. It depends on the apples you used. If you just used desert or cookers , you will not get much flavour. You need bite (tanin), bitterness(acidity) and sweetness. THis will then give a fuller apple flavour.

Prior to production if the juice isn't up to the mark you can add malic acid for the sharpness, and even tea for the bite (tanin). But post production I don't know.

I was thinking of chopping up some dried fruit like apricots and letting them steep in it a'la sloe gin to see if they would flavour it?

Ahh,

What you could do is make a the cider equivalent of mulled wine. I've seen a recipe in my Grans book. Basically you warm up the cider with cinamon,sugar,cloves,nutmeg etc makes a nice warming drink.
