Courgette Layer Bake

Courgette Layer Bake

Here's a great recipe for using up those good ol' courgettes! Right tasty as well.

2-3 Large courgettes
A little butter or oil
Nice fat garlic clove
Good pinch of oregano
Tin of chopped tomatoes
A couple of handfuls of grated cheese ~ anything you may have laying about.


A handful of breadcrumbs ~ an old crust grated or whizzed up is good.
Salt and pepper.

Slice the courgettes into discs and crush the garlic clove. Heat oil or butter in a frying pan and gently fry the courgettes and garlic until they are soft and a little browned.

Then in a shallow dish, put a layer of courgettes in the bottom, cover with half the tin of toms, a small pinch of oregano,then sprinkle a layer of grated cheese. Repeat with the courgettes, toms and cheese again. Top with breadcrumbs and sprinkle the oregano on top. Season the layers to taste with the salt and pepper.

Place in the oven, about gas mark 5 for 30 mins or until browned. Serve as a side dish with meat or as a veggie meal with homemade bread rolls and a green salad.

This should serve about 2-3 people, double up the ingredients for 4 hungry mouths if its a veggie main dish!

sounds good , I love courgettes!
- I can't eat bread so might try this without breadcrums - or perhaps I'll put some oats/ryevita on top or something :)

Mmmm.... oats sound like a good alternative, they go so lovely and crunchy when they are toasted. 8)

Yep, I'll vote for the oats as well. Good for you too! I'm sure that the main reason my cholesterol is OK is Muesli every morning!

Yummy, sounds good, my daughters often bring home free veg from organic farm thats past it's best so that sounds a good way of using up the courgettes. I always have to double everything up in my house, 2 of my daughters are avid eaters, not an ounce of surplus flesh on them :roll:

By the way Shiney, how did you get to be all "The Good Life" people ?!
