Meadowsweet

Has anybody tried eating/cooking with this? I've found some recipes in an old pile of papers (icecream, tea, using to flavour fruits, beer from the leaves) but haven't tried any yet.

I wonder if Meadowsweet sponge cake would work?

There's quite a lot near us, so I think I might have a go...

Careful how much you eat as meadowsweet is used in herbal medicines- it has an action similar to asprin so you need caution if your on Warfarin, or have and allergy or have a clotting disorder. It can be used to flavour wines or beers, but I've never had it in a cake!

I get asked a lot for meadow sweet by a number of chefs to make ice cream and sorbets with.
The best way as i remember is to ifuse the herb in with the syrup or cream.
One of the sweetest herbs known to man.
