Two green tomatos
2 tins tomatoes
1 tin cannelloni beans
1 large onion
3 or 4 sticks of celery
3 large potatoes
chili or chopped herbs
1 liter (1 3/4 pints) of veg or chicken stock
seasoning to taste.
Chop onion celery,carrots and potatoes and put in large pan with a small amount of oil. Saute for a couple of minutes continuing to stir.
Add tomatoes ,puree and stock. Bring to the boil and then simmer for about 20 minutes until all the vegetables are soft. Put into processor and whoosh up as smooth as you wish (I like to keep it quite chunky). It you do not have a processor then you can use a potato masher.
Add chillies or herbs , beans and seasoning ,return to pan for a few minutes to heat through.
You could try experimenting with this recipe as it can be made with any other vegetables that you might have around.
Serve with chunky bread and bells on your fingers and bells on your toes.
