Vegetarian West Indian Patties – By Dave Hamilton

Makes 24 Patties


250gms Short Crust pastry with 1tsp of turmeric added.
250g Mushrooms
100g Courgette
100g Peppers – or 500g Quorn mince/TVP
1 Medium Onion
2 Spring Onions
1 Small Chilli pepper
50g breadcrumbs
pinch of Thyme
1 Tbsp of Caribbean curry powder
300ml water
2 tbsp oil


Combine the vegetables and cook in a pan with the oil for around 10 minutes until softened.Add the breadcrumbs, thyme, curry powder and salt.

Mix well and stir in the water if needed,Simmer for 30 mins then cool.

Fill prepared pastry circles with cooled filling, using 2-3 tbsp per circle. Moisten edges of pastry circle with water. Fold over filled circles and seal by crimping edges with a fork. Vent patties with 3 fork pricks on the surface.

Bake at 180C of 20 mins or until golden brown. Serve warm.
