{"id":124,"date":"2008-06-29T22:37:40","date_gmt":"2008-06-29T21:37:40","guid":{"rendered":""},"modified":"2021-03-13T10:43:41","modified_gmt":"2021-03-13T09:43:41","slug":"glut-of-tomato-dish","status":"publish","type":"post","link":"https:\/\/www.selfsufficientish.com\/main\/glut-of-tomato-dish\/","title":{"rendered":"Glut of Tomato dish &#8211; By Jackie Holt"},"content":{"rendered":"<p>Glut of tomatos..Never again will you be wondering what to do with them.<\/p>\n<h2>Ingredients<\/h2>\n<p>2lb\u00a0(1 kg)tomatoes any colour (mixed is nice)<br \/>\n10 &#8211; 12 mint or basil leaves<br \/>\nsugar free sweet vinegar (recipe below )<\/p>\n<p>Lightly prick each tomato in several places with a cocktail stick. Arrange in a sterilised jar with the mint or basil. Pour in the sweet vinegar, making sure it covers the tomatoes by at least 1in (2.5cm). Poke the tomatoes with a wooden skewer to ensure there are no air pockets.<\/p>\n<p>Weight down the tomatoes then seal. The tomatoes will be ready to eat in 4 &#8211; 6 weeks, but improve with longer keeping.<\/p>\n<h3>Sugar Free Vinegar<\/h3>\n<p>2 pints cider vinegar or distilled malt vinegar<br \/>\n1\/4 pint apple juice<br \/>\n1tb spoons peppercorns<br \/>\n1tsp cloves<br \/>\n1tb coriander seeds<br \/>\na few chillies (optional)<\/p>\n<p>Put the vinegar and fruit juice in the pan ,bring to the boil and skim well.Make a spice bag with remaining ingredients,add to the boiling vinegar mixture and boil for 10\u00a0minutes.Remove the spice bag,pour over tomatoes.<\/p>\n<p>You can make this vinegar mix in larger quantities and it will keep for 2 years and can be used for loads of \u00a0other things if sealed in hot sterilised jars.<\/p>\n","protected":false},"excerpt":{"rendered":"<div class=\"mh-excerpt\"><p>Glut of tomatos..Never again will you be wondering what to do with them.
