101 Uses For is popular and let's hope it stays that way. Our second book is presently called 101 tips for self sufficiency; we will certainly dip into this section for ideas. So post away and let's try and get at least one thread up to 101.

What are some of your most favourite pasty recipes (sweet or savoury)?
And anyone have tasty recipes for the pastry part as well?

1. Traditional: Steak, potato, turnip/swede/rutabaga, carrot, onion, sage or parsley, thyme, S&P

2. Cheese: and Bacon: Cheese, Bacon, Potato
What's your favourite cheese? I like cheddar or gouda and think others would be good as well.

3. Creamy Chicken and Vegetables: Chicken, potatoes, carrots, celery, mushrooms, white sauce, S&P

4. Pork and Apple: Pork, Apple, Cabbage, potatoes, S&P

5. Cheese and Potatoes: Potatoes, Carrots, Peas in Cheese sauce

6. Samosa: Curried Potatoes and Spinach

7. Apple Pie: Apples, Lemon juice, Sugar, Cinnamon

8. Apple and Black Current: Apples and Blackcurrent jelly

9. Cheese and Onions: Cheese, Potato, Onion

10. Lamb and Leek: Lamb, Leek, Potatoes, Carrots, S&P

I really like proper Cornish pasties, but being a big ol' veggie I had to substitute the beef...so what follows is

13: Quornish Pasties!

1lb Quorn mince (chilled or frozen)
1/2lb potatoes (I scrub them rather than peel)
1/2lb peeled swede (sometimes I use 1/4lb each of carrot and swede)
1 smallish onion peeled
salt and pepper
butter
sometimes I add some garlic too.

Chop the veg up as small as you can and mix together, season it well, especially with the pepper. The smaller the veg, the better the flavour. Divide the veg between each round of pastry. Add a small blob of butter and a share of the Quorn mince. Add another blob of butter and more pepper. Seal the pastry edges and crimp in the traditional style. Brush with beaten egg.

These are delicious, easily as good as ones made with beef (or so my meat eating friends tell me) and far, far superior to the Cornish style pasties Quorn themselves produce.

Tried one of these for supper. They're OK, but I think they'd be much nicer cooked. :scratch:

They all sound delish!!! Does anyone have a gluten and soy free pasty pastry to share? That's our biggest obstacle to enjoying such a lovely dish.

Pasties are great as you can vary ingredients tremendously. Here's a few I enjoy

14. Potato and mushroom (cook onion,diced potato, garlic clove, chopped mushrooms and parsley) fill, glaze and bake

15. Spiced chickpea and potato (add ground coriander and cumin to onions, add cooked chickpeas, fill, glaze and bake

16. Vegetable - fry diced veg - whatever you want but I never miss carrot, potato and peas, flavour with herbs and some grated cheese - fill, glaze and bake

17. Courgette, parmesan and sage (cook onion, potato, after 10 mins add courgettes and sage, cook for 10more mins, and parmesan, cool, fill, glaze and bake

18. Mediterranean veg - whatever you fancy (peepers, courgette, aubergine, tomatoes, artichokes etc

19. Stilton, walnut and cranberry - hubby made this one Christmas Eve, his not about to ask for the recipe, but it was suitably Christmas and went down well when we got back from the pub

big fan of pasties here (well i do live in the westcountry!) imho a carrot has no place in one....

meat (usually skirt) potato swede and onion. and should be slices not cubes...

I've always been fascinated by the pasty - the tiddy oggy, as Red will inform anyone. It's that oggy bit, and Contadina should also be able to inform anyone that there's a very similar Italian word (oggi, is it?). The coincidence is tantalising.

Oggi means today in Italian - so not sure if they are related, other than if it means best eaten today :wink: . The Italian equivalent to a pasty would either be panzerotti or calzone. Both are folded over pizza doughs the first with a tomato and mozzarella stuffing and the other with whatever you fancy. Panzerotti are very popular in the south and have the same twirly crust as a pasty. At just one euros a pop they're a wonderfully cheap and filling fast food.

So when I thought I'd seen a sign saying "Fresh Pasty/Cake/Whatever", it was just saying "Fresh Today"?

Oh dear - that must rate as my earliest Senior Moment (I saw the sign a good few years ago).

20. mushroom, cherry tomato and green pesto - gorgeous. I tried this first at a farmers' market and went back for a second one. I then decided to try making one at home and it was lovely. After that, I decided to try other pasties, almost all were successful. This is what got me started in the kitchen. Now I spend almost all morning, nearly every morning in the kitchen

21. sausage (veggie or meat), mash and baked beans
22. baked beans and cheese

I make pasties with leftover lamb,an onion,2 squirts worcester sauce,2 tbsp tomato puree and half a pint of beef stock cube/oxo,flour to thicken and oviously short pastry to wrap it in.Yummy!
Grow it,make it ,eat it, drink it and sleep well!
