What to do with Shallots

Post: # 116483Post Peggy Sue »

We ahve a small onion & shallot mountain (OH got carried away ordering sets). I have made loads of onion chutney, plan on eating curry daily etc to eat the onions but what can I do with shallots?

I know I can pickle them but ut seems a shame they have such a lovely flavour, there must be other ideas?

Shallot keep better than onions, in a cool, dry place. I keep them to use when the onions run out, or start going bad in the spring/early summer.

I absolutely love roasted shallots, and I use them as onions in cooking if I've got a lot.

This recipe from the wonderful Oded Schwartz sounds good

Nice looking recipe mmm

I had thought of roasting them so must give that a go.

It's funny I thought someone told me shallots don't keep as well as onions so use them quick- the panic is now over then!

Nice with steak, cream and red wine too!

It's a year until you get the next lot - are you sure you have enough to last you until then?

I've just finished last year's onions - just in time for the first of the new lot to be pulled.

Actually Ina I may not have enough, discovered they are wicked on the BBQ!

However...courgette chutney...now this weekend saw the onslaught of serious courgette growth. I had 2 mall courgettes on the palnts Thurs, having eaten 2 a day to keep the cop under control. We now have 10 marrow sized monsters and even more courgette sized veg( well I suppose that was last nigth, they too could be marrows today?)

Now I need more glass jars.....
