Another Jam Problem

Another Jam Problem

Hi,

I made strawberry jam for the first time, at the weekend. (Probably my fourth flavour) After passing the set test, I added the bit of butter to remove the scum but it didn't work, so I spooned off as much as possible. The morning after potting, it had a weakish set and a scum layer in the jar. It's only for us and friends but I'm wary of using it. Is it OK or should I get rid of it and start again?

Oh, I wouldn't chuck it out... It'll be perfectly fine to eat.

However: I never skim off (the frothy bits always were my favourite part of the jam!); I would never add butter. I always use added pectin, especially for strawberry jam.

I skim off the froth but have never added butter! I've never thought to keep the froth and eat it as it always looks rather congealed and horrible. :lol: I must try next time except I'm usually too busy eating all the saucer tests which haven't yet set. :mrgreen:

Hi,

Thanks for help. I read about the butter in a Delia book I think, it's worked fine on others. I've tried the scum and it was fine and eating the set tests keeps me amused until it's ready and helps postpone washing up.
