HI
This is my first posting and I have a problem with some vegetables. This year we have had a large crop of marrows and I wish to preserve some for the winter. Can anyone help with preservation of this crop?

Hi and welcome! Marrows terrify me!!
Re: Marrows
Welcome to the group Val.
If by "preserve" you mean you want to store marrows for later on, just leave them on the plant until it dies down and the marrows turn yellowish and have a rock hard skin.
They will then keep for several months at normal room temperature.
If we have a wet autumn it may be best to put a tile or similar under each marrow to keep them from laying on the wet soil and rotting.
Personally I can't see any point in eating marrows, just watery mush, but then it's a good job we all have different tastes.

Welcome in
Marrow and ginger jam?
Otherwise, as previously said, once the skin has hardened they do keep for a very long time.

Re: Marrows
Stuffed marrowis just the best, OH does them with mince & rice then covers with a tomato & herb sauce and also a version with sausage meat and cheese sauce. I have picked what I think will be the last one this year. Our plants were all early we have had caugettes and marrow since early June this year.
