pasta machines

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I have a manual pasta machine that I got as a present. It was bought of Amazon, its an Imperia, and it came with a tagliatelli and noodle attatchment.

I have used it loads, and dont think I would ever go back to bought pasta as home made just tastes sooooo much better.

I would highly recommend getting one, they are lovely things, and I really enjoy making pasta with it. I am sure you would to.

I bought a pasta machine when i first got married (20+ years ago), tried it once, couldnt get the hang of it and it dissapeared a few years later in a house move. Decided to become more selfsufficient last year, more home bread making etc and decide to have another crack at pasta. I placed a wanted on my local freecycle and got offered one by a lovely lady who had bought it, used it once, couldnt get the hang of it..... yeah, same old story. so now im the proud owner of a nearly brand new one and im slowly getting to grips with it this time, been the odd disaster but thats the same with everything. So i would definately try freecycle, then the charity shops or e bay. GOOD LUCK in your search.

I bought an imperia pasta maker from the charity shop for £5 last year. It has been waiting in the cupboard for me to get some inspiration. After reading this thread, I decided to go for the eggless pasta (son is vegan). it looked good but tasted awful :o(

I think it must have been the way I made it. Even so, it was great fun using the machine, especially making the tagliatelli :o)

I put it on the bird table, but even they refused to eat it. Any ideas what I may have done wrong?

I think eggless pasta would be the wrong consistency for the machine. I'm amazed you got it to work :lol:

Ah, that could explain why I had to dig bits of it off the cutter part afterwards :roll:

I'll try it with the egg pasta when son isn't eating with us.

I've watched people on the telly using pasta makers with no difficulty - when we tried it took three of us!

It was an eggless butternut squash pasta, which tasted great. When we tried to roll it though every time it touched the counter it stuck and ripped - so we ended up with one person winding the machine and two others walking across the kitchen, holding it in mid-air :lol:

Well worth the effort though.

I tried to go down the Freecycle route, really I did, but we're only allowed to post 2 wanteds a month and I've used those up and can't post another until the end of January. Patience is not my thing. I have decided I want one, and that means now!!! So I've ordered one from Amazon. It's an Imperia with spaghetti cutter, a ravioli tray and some other bits and bobs.

I've just checked the tracking status of the order and....

Argggh
I'm waiting for Argos to get one in. I was given some vouchers for Christmas for this purpose but the Swindon Argoses (both of them) have not had one in stock for weeks.

Off to Bath on Saturday so I'll look there. Maybe more call for pasta machines in Bath.

:lol: Rosendula, you are just like me, i want everything yesterday. If i decide i want something i usually traipse off and buy it from the first place i see it and end up seeing it later at a lower price! you can guarantee that now ive just paid £8.99 for "not on the label" I'll probably find it this week in a charity shop for about 99p! :(

janemiss, you have to stop looking once you've bought one. OH does that and gets so cross with himself. It's like checking your lottery numbers when you haven't put them on this week. Once I've bought what I want I refuse to look at prices for them anywhere else, even if they catch my eye. :rabbit:

I had great fun with my machine the day I got it. I made loads. Unfortunately, when I cooked it, it came out like a soggy, sticky mountain of goo. Oh well, I guess I'll have to have another go. :wink: What did work well was cutting them into little squares and frying them. Good with a dip. :mrgreen:

Did you cook it too long? Fresh pasta only needs to come back up to the boil and it's pretty much done.

yup - when the eggs started to come in and we got out our past machine, inside the box, in himself's handwriting were the words:
100g flour to 1 egg per person - you always cook it too long!
and its been good advice! - really needs very little cooking. keep going, once you have cracked it.. its lovely, and so easy

I was short on eggs that day so made egg-less pasta. I asked Katie if she wanted noodles or tagliatelle for lunch and she said noodle-telly :lol: I cut noodles and put them in boiling water for about 2 minutes. They were a soggy lump. So when I was doing fettucine for our evening meal, I put them in a colander which I'd put in a big bowl and poured boiling water over them. Left them about 30 seconds and drained them. Same thing happened. OH had a go in the evening using some I'd dried in the dehydrator and he said his were fine (I was sulking a bit and didn't try them :oops: ). We don't know if his worked because they were dry, or because he added salt and oil to the water. :dontknow: Any ideas?

I'm going to try egg pasta tomorrow. Perhaps that will come out better. :sunny:
