Leftover Malt extract - Any ideas?

Post: # 141037Post benner »

Hi, I'm having a go at one of my grandad's old beer recipes and I'm going to end up with about 2lbs of malt extract spare... for now anyway!
Anyone know if it can be stored safely for a while? At least until I'm allowed to make another batch of something, I've only got one empty demijohn left.
cheers

I thought about that, I may sterilise a couple of jars and bung em in the fridge. Probably keep allright for a few months.

Keeps indefinitely doesn't it.

We use it instead of sugar when making bread - gives it a lovely taste.

I must be a bit simple though - never thought of putting it in milk! Duh.

Of course

This is a great recipe I use often - not as dark or gooey as commercial ones but gorgeous nonetheless.

Malt Loaf

8 oz plain flour
pinch of salt
2 tbsp soft brown sugar
1 tsp bicarbonate of soda
5 oz seedless raisins
2 oz golden syrup
2 tbsp malt
1 approx 1/4 pt milk

Grease and line a loaf tin (about 8.5" x 4.5" top dimension).
Sieve the dry ingredients, add the raisins.
Melt the malt and syrup in half the milk.
Make a well in the centre of the dry ingredients and pour in the malt mixture.
Add more milk as necessary to give a sticky, soft consistency.
Pour into tin and bake 1 - 1 1/4 hours at 160 C, 325 F, gas mark 3.
Turn out to cool on wire rack, and (attempt to) keep for 24 hours before serving.

My parents gave us a dessert spoon of it each day as kids - we loved it, but can't remember why we had it daily.

i think it's got B vitamins. Funny how these "waste products", like malt and yeast extract and molasses are more nutritional than what they produce eh?

Did the malted milk thing... very yummy, never had it before. Malt loaf is a certainty this weekend! If it keeps well, then I'll save it till I can get another load of homebrew on the go.

As a matter of course, does anyone know of anywhere other than homebrew shops where one can get malt extract? I paid nearly £12 for 4lb of the stuff, must be able to get it cheaper somewhere.

Health food shops - I doubt it works out cheaper but you can certainly buy smaller amounts.

It's not cheap anywhere - I'm fairly certain we paid £3+ for a 500g jar.
