We have lots of oranges at the moment so I had my first ever go at making marmalade. I used half the sugar that the recipe asked for (I hate all that sugar you're supposed to put in jams but I'm always worried the recipe won't work if I use less) and it's come out with a lovely fresh orange tang rather than the sweet sicky marmalade I'm used to - which I much prefer. Had it for breakfast yesterday with home made bread. Yummy :)

Did it set properly ?
I always understood that the sugar content together with the pectin was what caused it to "set".

I made some marmalade this week, I did use lots of sugar, but I have a sweet tooth1 The peel is so soft and yet really tangy, unlike shop bought which tends to be a bit stringy somehow.

thanks for your replies.
it looks a lot better than the globby mess in the photo, and yes, it set fine although it was on the stove for a good few hours (i made a huge panful with 13.5lbs of oranges).
i think you can use any oranges - i just used our windfalls which are sweet eating oranges.
with the next lot of windfalls i'm going to try piri piri and ginger marmalde!

My favorite breakfast, home baked bread and with chunky marmalade with the rough cut peel and a half of lemon to give a bit of a bite. Thats done it, of to the kitchen to cut a slice,

Yes you can! I use ordinary oranges for my marmalade and it is great. Really easy to do as well.

You could always try orange curd, same as lemon but substitute oranges its yummy and sooooo easy makes a change from both lemon curd and marmalade

Another thing you could try if you're into baking cakes, is to make your own candied peel.
A bit of a long winded process but very worth it.
