Strawberry, rhubarb & ginger jam.

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Can't find any recipes for the above, but i'm sure that somebody here will know one...... please. T'would be even more brilliant if it was diabetes friendly (maybe containing a sugar substitute). Thanks in advance :salute:

can't help with the recipe as such but i just weigh the fruit and put an equal amount of jam sugar in
so for this jam i would probably aim for about twice as much rhubarb as strawberry and and ginger to taste
i know this probably dosn't help much but when i asked my mum how to make jam that is basicly wot she told me and when i phoned her to ask why it wouldn't set was told boil it longer
so my advice is try it and see :lol: if it dont work call it syrup and pour over icecream :roll: :cheers: :roll:

you will probubly need to be very careful with the amount of ginger, ive used it in preserves and it can get very over powering if your not very careful with the amount you put in

I'd try a standard Rhubarb & Ginger recipe but half the rhubarb and add the same plus a bit of strawberries... ie.if the recipe calls for 2lbs of rhubarb I would use 1lb rhubarb and 1.5lbs strawberries.

dunno if it would work... but I may try it later in the season when strawberries aren't so expensive (or when mine fruit) :flower:
