Excess strawberries
During the past week i have picked/harvested 3.5 kilos from our patch (yes i'm afraid i am sad enough to weigh each picking & keep a running total!) & there is at least the same amount to come again. So far we have made jam, scoffed our faces, & given loads away......... anyone know other recipes/etc as they can't be frozen........ or can they?
it's either one or the other, or neither of the two.

Re: Excess strawberries
They can be frozen just fine. Just trim the stems off and chuck 'em in the freezer.

Strawberry Schnapps? Easy to make... http://www.danish-schnapps-recipes.com/strawberry.html
Or Strawberry Lemonade: http://www.foodnetwork.com/recipes/emer ... index.html
Puree them, mix them with natural yoghurt and pour into ice lolly moulds and freeze for a cool summer idea.
Make wine or mead...
Add some sparkling water and ice to the puree...

Strawberry Wine... It is amaizing
The best book available is a little purple book... only one I use... http://www.northernbrewer.com/wine-books.html
Winemaker's Receipe Handbook
An exhaustive compendium of 1-gallon recipes for country wines made from just about anything you can think of (Concord grape, watermelon) and some things you might not have thought about using for wine (turnips, onion). 34 pages.
It has all kinds of "old way" recipies... just remember to keep a log book, document every batch, keep it...

Re: Excess strawberries
I've moved this to the fruit section where there is already a current thread on what to do with strawbs.
