Pickling eggs

Pickling eggs

Can anyone advise me on how to pickle eggs? I've had my chickens for a month now and although there's only 4 of them they are producing more eggs than my partner and I can keep up with! Also, how long do they last once pickled? Help would be much appreciated.

what I do is boil some eggs for at least 10 minutes. cool and peel and pack into a clean jar. then i heat some malt vinegar until its just simmering and the fill the jar up. shake out any air bubbles.

i dont know how long they last officially.

You can also freeze eggs - beat them up, then put in a container marked with how many eggs in.. then you can defrost (in winter when there are less eggs about) and use in cooking.. ie cakes, quiches, yorkshire pud. etc
