I am in the process of making elderflower cordial and wanted to use the fruit from it, oranges and lemons to make marmalde, however, i dont have a receipe for it. I presume i would just use the fruit as normal (but not the elderflowers) ? Does anyone have any advice please.
Thanks

Re: Help making Marmalade
Sorry, I don't quite understand - what fruit are we talking about? Are you using fruit of some kind in the elderflower cordial?

Hi Ina
Yes, i was using 2 oranges and 2 lemons with the Elderflowers. The cordial tastes great, i have made the marmalade now that also tastes great, its got a lovely smell of elderflower and a lemon and orange taste, but , i had real problems getting it to set. I have resorted to using gelatin and i am hoping. If it doesn't work i am sure there will be another use for the stuff!

With gelatin in it it might not keep very well - I would use it quickly, and keep it cool until then. Use pectin next time.
