ok i tried the hard white cheese recipe and it was really easy (once i found everything and made the blender work).
was easy peasy, i had to used mustard instead of mustard powder and i had to use a blender because the food processor blades have disappeared. however there was no problem using a blender as the mixture is liquid enough. the mixture before it sets would be good as a dip!
the quantities listed made about half a 500g margarine tub full.
the next morning it didnt slice as well as i hoped (although our fridge isn't as cold as it should be - the coils needed cleaning), and i think i had put in too much onion, garlic and mustard (i put in about 2 tsp of each). however it spread very nicely, with the consistency of pate, smelt nice and tasted good. i had it in a sandwich with cucumber and cress.
so thanks green aura i will be making that again!

The only vegan cheese I've ever bought (by mistake!) was a parmesan style - and that tasted allright. Must be difficult with a child; I suppose "us adults" can always try and convince our minds that we don't "need" cheese - although I must admit I would find it difficult!
Saying that - there's that vegan icecream that I've had - now that was very good... (Swedish Glace, I think?)

Swedish Glace is excellent. I know many non vegans who eat it anyway because it's so tasty!

I don't think I put in enough Agar Agar and it came out softish but that does not matter.
Wonderful spread for sandwiches. I will definitely make this again, and again.
I am vegetarian, not vegan, but I find the vegan and dairy free recipes so very delicious.

Great cheese recipes, I'll try these! This isn't a cheese recipe but thought you might appreciate me posting it here anyway. A really easy dairy alternative for cooking is Silken Tofu - you get it in packets and it seems to last forever in your cupboard. You can blend it with a little sugar or other sweetener it makes an amazing cream, and can also be added to cakes instead of eggs. I'm still looking for a more self sufficient alternative to buying this though! Here's an amazing chocolate truffle recipe I tried the other day.
100-200g dark dairy free chocolate (depending on how chocolatey you want it)
1 packet silken tofu (not precise as they tend to be a similar size and it doesn't really matter)
Cocoa powder (sieved)
Add some more sugar to taste if you want to.
Melt dark chocolate, blend the tofu, add sugar if you want to, mix together and leave to set in fridge. Then quickly roll into balls and coat with cocoa powder. Naughty, but not as naughty as shop bought with cream! You can change the recipe to add liquer etc.

Not sure about the cheese, but I use unsweetened soya for cooking and in my tea, and it is fine.
Personal preference for drinking is for oat milk or rice milk though, and you can get a nice almond one too out here.
Anyone else heard of "donkey's milk"? It's supposed to be pretty similar to a thin version of oat milk

I prefer rice milk but soya milk is whats easily available nearby, although I barely use it.
If I am prepared i will make hemp milk which is delicious (soak a cup of hemp seeds with a couple of dates overnight. Blend with a cup of water and a pinch of sea salt - maybe add a bit more water if its too thick. Strain and enjoy. YUM YUM!)

It's just a name!
You get a bowl of oats, chuck boiling water on them and leave for hours until stone cold. Then you can drink the liquid and eat the sediment. Supposed to be quite tasty, though I've not tried it myself
