I've got two gallons of elderflower on the go and just started a gallon of potato wine. I should have had a few gallons of cider on the go as well but the wasps beat me to the apples. We were away for three weeks and as mentioned on another thread everything seemed to ripen early and was gone when we got back (plums, damsons, apples) I nearly have enough blackberries for a gallon of that to get started and then the elderberries in another week or so.

When we were away I found a fantastic book in a junk shop, it's called 'Drink Your Garden' and it has loads of recipes for all kinds of wine from common or garden things (well garden actually!) So I'm going to try out marigold flower wine (loads in the garden) and oak leaf wine (sounds unusual) plus whatever else I can stumble upon. :drunken:

Potato started this week, I used all the small and eaten spuds we dug up, and then fed the mash to the chickens. Very useful.

Got 10 minutes of hops boiling left for 40 pints of Pale Ale. Will be pitching the yeast tomorrow.
1 Gallon of Honeysuckle flower wine onm the go and I'm currently sitting on about 60-70lb of apples. Could do with a few more though. Come on Southampton freecycle!

I don't brew my own beer or wine, but I make fruit liqueurs (much like rumtopf I am told)

this year we have had:

cherry vodka, strawberry rum and will be having some blackberry vodka soon too. that always goes down well as xmas pressies.
oh how I love my tea, tea in the afternoon. I can't do without it, and I think I'll have another cup very

Yesterday I started off 5 gallons of elderberry - my first non-kit wine (and only my 3rd ever brew!).

De-stalking 15lbs of elderberries took me most of the day!

You won't be sorry about the elderberry. You may have to wait a little while for it to reach its best (but not in my experience) but it's well worthwhile. In fact, I'm willing to bet that next year you'll be out scouring the countryside for yet more elderberries.

And it's "strigging" young man. De-stalking indeed! :mrgreen:

Duly noted!

I'm really looking forward to it. Hopefully 5 gallons will mean enough bottles will survive temptation to really mature properly. I was stunned by how many elder trees there are in our area of Kent - I gathered over 15lb of berries without walking more than 1/2 mile from our front door, and only picking those berries within easy reach from the ground. We're lucky enough to be near a railway line and there's a tree every 100 yards or so along it. I'm already planning for next year...

Hi all,

I'm just a novice and keep getting told off by a good friend because I do it all wrong!! :geek:

But........ I have Elderflower champagne maturing (recipe thanks to hugh ferarnley whittingstool on a well known TV website)
1 lot of cider
1 lot of Apple Beer just started off, a couple of weeks left before I can bottle
and 5 days into Marrow Rum thanks to this forum (should it really smell like that? the fruit flies are going crazy!!)

Damson Wine next methinks, the tree is groaning, anyone got any spare fermentation buckets?

i did the hfw elderflower champers before they changed the amount of sugar from 2kg to 700g :drunken:

very sweet and very very fizzy, just starting to get some booze in it now lol

have 1 dj of elderberry port, recipe brought me here, with 2nd and 3rd gallons off the same must. never done wine from fruit before, all very exciting

tasted the port today, it's not finished, but blimey it's gonna be strong! :thumbright: :shaking2: :roll:

Re-stuffed the marrow with Dem Sugar and waiting for 2nd harvest of Marrow Rum.
Damson Wine bubbling away very ferociously, I thought there was someone banging on the back door the first few times I heard the gas releasing from the airlock on the Fermentation bucket, Very Scary!!
Apple beer now bottled-Christmas is coming........ :wav:
