Peanut Butter Soup

Peanut Butter Soup
As requested
(as taught to me by a Ghanian friend)
Lots of veg, any you want really, but I tend to use carrot, onion and celery and any green veg I've got.
Oil or butter
Strip of seaweed (my addition)
Stock - chicken or veg
Tin of tomatoes
Any meat you like or lentils (I usually don't bother with any but leftovers are good)
Peanut butter
Chilli or chilli sauce
Chop veg fine and saute gently Except greens) in oil or butter. If you're adding raw meat seal it here.
Add stock, tomatoes and seaweed and bring up to boil. Simmer about half an hour.
Add peanut butter, chilli and greens. Mix well and simmer for another 5-10 minutes.
You can blitz it if you want (if I've got meat in I don't otherwise I do) or take strip of seaweed out.
Check seasoning.

Sounds interesting but my OH isn't into peanut butter.
Guess I could just not tell him! Approx how much PB do you use, Maggie, and I assume it doesn't matter whether it's crunchy or smooth?

My mother doesn't like it either - or chillies - so I often just make the soup without either and then just put them in my bowl. Doesn't mix up as well off the heat, but I don't care! I quite like finding lumps of peanut butter.
Trial and error with how much you put in. You can use anything between a tbsp and half a jar, depending on taste and how much soup you've made of course

And crunchy or smooth are just fine.

Oh thank you. Might give this a go. I've decided to try at least one new recipe a week this year so this can be next weeks.

I'm going to try it but maybe we'll do a taste test and I'll put half in another saucepan with the pb in and see what he prefers.
Sounds like a way to use up a parsnip without it being overpoweringly parsnippy (I have tons of them left!), and leeks that we need to eat up over the next few weeks.
Oh btw peanut butter is another thing we have to buy from the 'English' shelf in the supermarket at vast expense!

I'm making it!!! Turns out OH does like peanut butter, but he doesn't like it much in sandwiches cos 'it gums his mouth up'.
Haven't got to the putting the peanut butter in yet or blitzing it. We're having it with cheesy herby griddle scones.
Will let you know tomorrow what we thought of it.

I did enjoy it but I think OH enjoyed it more than me as he pronounced it "one of your better ones"! I think I found it a bit sweet with the parsnip and carrot and I don't like sweet soups. I also don't know if I could actually taste the peanut butter
but I imagine it just added to the flavour (put in two large teaspoons which was a fair bit and it is rationed here!). But will certainly do it again minus parsnip (I threw in a few lentils too).
The scones are just scones with egg (plus some grated cheese, tsp mustard powder and few dried herbs) but cooked on a griddle (frying pan would probably work too) instead of in the oven - I hadn't realised that you could do that until recently when I googled - saves a lot of electricity putting on a hot oven for a short amount of time!
Overall a very nice dinner, merci buckets Maggie for inspiring me to do something different.
