Apple mincemeat

I seem to remember someone posting a recipe for apple mincemeat - but I can't find it Can anyone help?

I make mincemeat with apples as the base but it varies depending on what I have available. It's usually a base of stewed apples, with quince, medlar, plums, raisins and any other dried fruit that's going cheap and nuts. I don't have a recipe I'm afraid, I simply add enough sugar to make it set.

A tip is to chop everything smaller than you think you need otherwise it doesn't fill the pies very well. I also find it's best to make it one autumn and use the next year.
