So delicious, yet so easy to make!

It was dead easy to make and tasted heavenly. I may ditch the eggs next time though.

Recipe (conjured up myself)

Put a pack of tofu (silken or firm, doesn't matter) with 2 eggs (optional), one large onion and half a sweet pepper into a blender, season with salt, pepper, various herbs.

Put in a bowl, dice the other half of the pepper into small chunks, add grated cheese (as much or little as you want) and mix up.

Cut the top off a small pumpkin, scoop out the seeds and put filling in. Put top back on the pumpkin.

Put into pre-heated oven at 200 degrees for about 40-50 minutes.

The filling should be enough for about 4 pumpkins - I had only two pumpkins, one for me and one for my boyfriend. I made pastabake with the rest of the filling and froze it.
