Tonight for us is a beef casserole with added (freebie) chorizo! Made from beef, onions, carrots, shredded sprouts and lots of stock and seasonings!

Re: What are we all having for dinner?
Oooh Zaxdog, I am glad you asked this question, I was just thinking about dinner (always stay one meal ahead, that's what I say!
We will either be having a cheesy root vegetable crumble a la HFW(if I can be bothered to make it when I get home) or a sausage casserole made with our bangers, onions, tinned tomatoes, carrots and possibly some shredded kale on the side. And mash!!
Or pumpkin soup, depending on how hungry I am and how much work I have to do when I get back.
Decisions, decisions....

Re: What are we all having for dinner?
Hi Bonnie, I am with you on the one meal ahead theory. I am already thinking about tomorrow's dinner!
Trying to think of a way to cook mussels that we will like! There are loads on the shore and we weren't keen when we first tried them so I am thinking ofa way to disguise them lol!
The veggie crumble sounds yummy but I think I'd go for the sausage casserole in this weather....brrrrrrr!

Re: What are we all having for dinner?
If I get around to making it this evening, we are having: Muttar Paneer, Boiled Rice and home-made Naan Bread.
If not... we have ragu sauce, Lentil Soup, Hummus, Roasted red pepper hummus, Middle Eastern Chickpeas and several other home-made frozen meals in the freezer :D

Re: What are we all having for dinner?
Tonight we will be having a rather puny beef casserole.....in other words it will contain the beef and onions and some peas and the stock and little else as we have run out of veg. There will obviously be some potatoes, baked as the oven is on anyway. Tomorrow is shopping night so I'll try and plan next weeks menu during the day.

Re: What are we all having for dinner?
Mmmmm they all sound lovely, especially SPS! I wish I could cook nice curry.
Zaxdog, what about a miniscule amount of bacon (sliced very thinly), cider, cream and leeks with your mussels?
Rather defeats the object of foraging for free mussles, but is LOVELY. Or, a tin of tomatoes, obscene amounts of garlic and onions and chopped parsley? Mmmmm I love mussles!

Re: What are we all having for dinner?
I had a massive cook yesterday so I have tea pretty much done for the next week and a half! Tonight is tamale pie, tomorrow night is shepherds pie, then it's sausage made with black pudding and corriander with mash. After that we have a very large gammon and some lentil soup to go thru - Oooohhhh I love "tumble down" cooking!
Let us be lovely
And let us be kind
Let us be silly and free
It won't make us famous
It won't make us rich
But damn it how happy we'll be!

Re: What are we all having for dinner?
It's not fair, I have been cooking and baking lots of lovely things of late yet you ask this question today when I can't be bothered and I've got baked spuds in the oven to go with a Lidl pizza! That's junk food for us out here in the sticks!
But they are home grown spuds and served with home grown salad so it's not all bad.

Basically you make a chilli and then top it like this:SusieGee wrote:OK I give in what's tamale pie pleaseMilims wrote:I had a massive cook yesterday so I have tea pretty much done for the next week and a half! 300g plain flour
300g cornmeal
2tsp baking powder
1/4 tsp salt
Pinch sugar
Mix in a bowl then add
3tbsp melted butter
180ml milk
1 beaten egg
Mix thoroughly and then put on top of chilli. Grate some cheese over and then bake until golden.
It makes a yummy alternatve to mashed potato etc

Re: What are we all having for dinner?
I only know of Tamale Pie because they mention it in the cBeebies 'Lunchtime' song, how sad am I?
Tonight we have mixed bean casserole (well, stew really because it's cooked on the hob, I'm far too tight to turn the oven on) with herby dumplings.

I took my dog to play frisbee. She was useless. I think I need a flatter dog.
