Re: What are we all having for dinner?
It was going to be game soup - but it wasn't ready in time so we've had carbonara instead
Let us be lovely
And let us be kind
Let us be silly and free
It won't make us famous
It won't make us rich
But damn it how happy we'll be!

Re: What are we all having for dinner?
We had a chicken and a ham over xmas and used them up yesterday in a chicken and ham pie made with a bit of leftover pastry I had put in the freezer, some leftover chicken gravy, a slosh of wine left in the bottle and about a tablespoon of cream left over from the trifle. And it was the nicest pie I've made for ages!
Today - pizza, as my son had a friend round and its the only thing she eats!

I think a broccoli and cauliflower cheese with the end of the cheeseboard tonight with some crusty rolls if I can scare Toby into the kitchen to bake them!

Think we'll have duck egg tortilla (omelette) cos I have lots of salady stuff left from our Boxing Day cold turkey meal. Get a bit sick of it but don't like throwing away duck eggs! Anyway OH always cooks the omelette so there is method in my madness. *evil grin smiley*

My favorite way to cook mussels is to cook them in coconut milk mixed with red thai curry paste, and top with garlic and spring onion, and serve with homemade chipszaxdog wrote:Hi Bonnie, I am with you on the one meal ahead theory. I am already thinking about tomorrow's dinner!
Trying to think of a way to cook mussels that we will like! There are loads on the shore and we weren't keen when we first tried them so I am thinking ofa way to disguise them lol!
The veggie crumble sounds yummy but I think I'd go for the sausage casserole in this weather....brrrrrrr!

We had home made chicken goujons with potato wedges, salad, peas and corn. Yummy - I've never made goujons before so I'll be doing it again!

We are having a cauliflower and broccoli cheese pie (last of the Christmas cheeseboard and leftover pastry from the traditional new year's day steak pie). Served with roasties and parsnips (boak) for the OH!

Tonight is Kofta with curry and rice. I spent a bit of time cooking ahead yesterday so we also have a goulash and a stew for later in the week.
