What are we all having for dinner?

On tonights menu we have Goulash. I've just looked at the list for the week and realised that was on the menu for last night but I accidentaly did the Kofta curry. So much for being organised! :roll:

Roast chicken legs and chips tonight, probably with sprouts while they're still available (beginning to loosen and turn into spring greens)

Last night, we had a left over from a new recipe I tried this week. Make a mash, very buttery and add some cream, put some fried onion and fried bits of ham in it and some chive. Mix well, put in a pie dish, cover with grated cheese and put in the oven until cheese forms a nice crusty top. Serve with a salad. Really yummy!

So say a vegan Lasagnge would be good, as you would need to replace the cheese, but why a vegan chilli? Presumably TVP, chilli, tomatoes and beans are all vegan and vegetarian?

I would always cover my plate of chilli in cheese and maybe even a blob of sour cream, perhaps it is witholding the cheese etc that makes it vegan.

Weather is so horrible here I can't decide between venison casserole or veggie sausages, chips and beans (need comfort food)!

I think it's down to what you want personally. It's only a name after all - chilli non carne.

For a very basic chilli I would fry up some onions, garlic, chillies and very small cubes of carrot, chopped peppers maybe, then add chopped toms, some tomato paste, some kind of bean like kidney or borlotti and perhaps a wholewheat couscous or something like that for 'nuttiness', perhaps oatmeal, plus a spoon of Vecon then let it simmer for a while.

Add whatever inspires you. Mushrooms are one of my favourite additions or maybe broccoli.

Herbs, again it's up to you; I'm a fan of oregano, nutmeg, caraway but that's just me. :cooldude: Add them not long before it's ready.

Sprinkle with yeast flakes upon serving. Goes well with tortillas or just served in a big mug with a spoon for a warming snack.

My tips for Chilli.

Teaspoon of instant coffee is good.

Make it up to a week before you want it, I don't know why but it tastes so so much better.

What are yeast flakes? They do sound like a product of...... No that would be offensive to say, anyway they sound medical.

I take it you mean the chilli, not the coffee... :lol:

I agree - it's the same with curry. Something to do with the starches turning to sugars, maybe?

LOL. Nutritional yeast flakes, sort of nutty, cheesey, caramel-coloured flakes in a drum. I can eat it with a spoon, but I'm daft. Here for example though the B12-added one is a blue drum, not brown.

I'm writing a blog with great meal ideas! I am writing them with quantities for cooking for one but they are so easy to multiply for more people! Lot of great dinner ideas such as chicken and dumplings, chili, and lasagna!

Leek, mushroom and bacon risotto - but why does it always need more liquid than the recipes say and always takes 3 times longer?!!! Was lovely but 2 1/4 hours to cook dinner is a bit much!
