Hi folks,

Has anyone got a favourite spice coating recipe for the chicken drumbsticks like that white haired chappy?

I haven't BA, but I've seen loads of southern FC recipes all claiming to be the nearest to yer man's :lol: A quick google will elicit hundreds.

mine involves a good helping of breadcrumbs, jerk seasoning and something to hold it all to the chicken! i do play around with the seasoning but a really tasty one is jerk seasoning combined with a little tomatoe puree, oil to thin it slap it all over then roasted... mmmm :mrgreen:

Al, my recipe changes but the "secret" I think is double egging. Mix up the egg, coat, roll in flour with seasoning, leave for an hour or so. Bread crumbs, salt, white pepper, Garlic Salt, touch of cinnamon, corriander, then egg again and roll in the bread crumbs. Deep fry or oven roast, but keep it hot and quick to start to "set" the coating.

Thanks all, I'll experiment again. tried the seasoning in flour bit, 6 tbs flour to 6 different 1/4tsp spices and it didn't taste of anything spicy. Even mrs BA said no spice and she collapses as black pepper being "too hot". next lot was 10x spices in flour then into breadcrumbs but only slightly more spicyness. Mrs BA said it tingled her lips a bit !!

Oh well next try.....
