What to do with lard

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I like the lardy cake idea actually, I'm going to google recipes. Our butcher likes me more now I've bought lard, I think before he thought I was a dilettante whereas lard makes me serious.

O/T just thinking of the butcher. Does anyone eat tomato sausages? I used to eat tomato sausages where I'm originally from (NE Derbyshire) but apparently you can't get them here. I once asked the butcher and he looked at me suspiciously, and said reluctantly, 'we sometimes get sausages with sun dried tomatoes and olives in them'. Well that tells you everything you ever need to know about Cambridge and I am still tomato-sausage-less, I am even considering ordering them online even though I am sure I would have to order a million and the shipping would be ridiculous :-(.

Hahahahahaha, when I moved to London in 1970-something I went to the butchers and asked for tomato sausages. After looking at me like I'd crawled from under a stone for a few seconds he said "I think you must be from up North" and went back to whatever he was doing. Are they just a Chesterfield/Derbys thing? :dontknow: :lol:

Actually Lardy cake is Cornish.And that's all there is to it.That's because the best pigs come from Cornwall(Mrs OJ says the biggest pigs come from.....).

Oh, don't get me started on the sausage topic! I'm so angry at irish sausages, it's unbelievable!! :angryfire:

We have tv adverts that state 'we irish are proud of our pork sausages....'

Bloody Tosh!

Every single bloody irish sausage is a pink limp thing. There must be about 15 different makes of them in our local supermarket - but they all look the same! And then they all taste the same too - insipid.

Occasionally, you get 'Supreme' sausages, which might have a touch of apple or herbs - IF you can taste it in there.

So, the only place for a decent sausage here is T***o unfortunately. I asked a local farm which produces their own about this & was told 'Occasionally we do a speciality range of herby sausages and also we import some premium beef sausages. Our shop hours are...' blah blah blah...... WHY do herby sausages have to be an occasional speciality?? Why no pork & beef, or beef, or cumberland, lincolnshire... oh it makes me sick. :banghead:

Anyway, I shall calm myself..... Lard.... if I can't get goose fat, I use lard for my spuds & for yorkshire puds - you should NEVER use oil for yorkies, it's a travesty!! :lol:

You don't get it down here, you get Safron Cake, but funnily enough you got it allot in and around Bristol where I used to live. Big swirl of yellow dough with currants in and sugar on top.

You aint far enough down boboff, staple diet in the Helston area.(Irrelevant,but I've never warmed to saffron cake,it always smells like the inside of the bathroom cabinet).

As well as pastry, if you use white sauce in cooking, you can use lard in place of butter for making that. It gives the end result a rather different flavour - at least, the lard I render from bacon trimmings does - but I'm usually using it in a recipe that has bacon in anyway, so it works out fine.

I totally agree Julie, Irish sausages are supposed to make errant sons go running back to Mammy, if the adverts can be believed.
I have to say that I've never come across a decent sausage even in Tosssco, so maybe you like different ones to me.
BUT, the answer is simple ... I only make my own. That way you can have exactly what you want, herby, sagey, peppery, Cumberland, Lincolnshire, apple, leek, garlic AND tomato :cheers:

Oh and to get back on topic, you can fry them in lard if you want, but dripping is better (and for Yorkshire puds)

One of the few things which ever made me giggle out loud in public was going into a supermarket to be faced with a pack of sausages I'd not spotted before. In bright green letters, the label said "Thick Irish Recipe".

I saw a repeat of The Hairy Bikers on saturday night, gosh my glamorous life, and they went and looked at some tomato sausages in a butcher in Chesterfield, cue me pointing excitedly at the screen :lol: . (Shropshire as well though?! National domination is clearly on the cards).

What a shame it wouldn't be practical to do a Sausage Swap. We have some really marvellous sausages here, just not tomato ones!

They'll courier them to you in chilled boxes (at least within the UK). Dunno what the costs are though...

If you do decide to order them online, these are yum, postage is quite expensive (£11 if you spend less than £50) but if you have a big freezer, they do meat all sourced from the Peaks. http://www.mettricksbutchers.co.uk/index.html

Would be lost without a choice of sausages, I never buy plain ones.

Precisely my point, the people complaining most are in Ireland, so it still doesn't help. :lol:

At least the Peaks butcher delivers to Europe, but postage at £25.89 for 2kg is rather out of the question.
Not that it bothers me as my own sausages are excellent, I know exactly what's in them (no saltpetre) and they take next to no time to make, so all rather academic. :iconbiggrin:
