Making tomato Juice

There are many tomatoes ripening simultaneously, so it was decided to make tomato juice. The most ripe tomatoes were selected, placed in boiling water for three minutes to loosen the skin, then mashed in a pot. The mashed tomatoes were gently boiled for about 20 minutes with some periodic mashing. The mash was then run through a fine mesh strainer, and presto one has pure tomato juice. Absolutely nothing extra added.

That's one I will keep in mind for later this year as an alternative to making pasta sauce

I'm going to have a go at growing my own tomatoes this year and will definitely try this recipe (hopefully my crop will be big enough.....) :)

If they're going to be mashed, is it necessary to take the skins off? (Presuming you haven't coated them with chemicals). Why not liquidise them - saving you the hassle of peeling and putting them through a fine mesh strainer?
