Greetings ishers! Some of you might remember last year when I asked what to do about some cider I had added too much sugar to...Well, I let it ferment and it became an incredibly strong but still sweet apple wine. I entered it as such in a local brewing competition and won 2nd place! (These people must have had no taste!)
Anyways, my question. The prize for second place was a brewing kit (this one in fact http://www.the-home-brew-shop.co.uk/aca ... r_Kit.html). Unfortunately, it is a pitiful 5% which hardly seems bothering over tbh. If I wanted a decent strength, say 7.5%, cider then how much sugar should i add bearing in mind that I have followed the kit instructions precisely and the 30pints are now fermenting away in the kitchen.

2 lbs of sugar (a little less than a kilo) will raise the 30 pints by an additional 2.5% of alcohol. I'd just shove the whole bag in if I were you.

You can't do this now but if you'd made up to 20 pints instead of 30 pints that should do it as well.
