Any new marrow recipes?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Have had lots grow this year, have stuffed with -

Meatballs chopped up in bolognese sauce

Minced beef, copped onion, tom puree etc - grated cheese on top

Cooked chicken and mushrooms

There is a 3kg monster sitting on my worktop (and half a less fresh one that the chooks will get later.)

Anybody got any new ideas? There are still at least 5 or 6 ripening up. Thank goodness only 3 of the 12 seeds I planted actually came up :iconbiggrin:

Hmmm sounds a bit wierd but not as weird as some of the recipes I found when I googled - Marrow custard anyone? :shock:

Somewhere else on here I posted a recipe for marrow monster cream! Basically a vegan version of lemon curd - uses lots with a yummy end result. Sorry I've not got time to find it but I think it might have been on one of the latest courgette threads.

Thanks for the tips, I like the idea of freezing it - I wasn't sure how it would come out in a soup, I thought it might go slimy, but I made some at the weekend and it's delish! Love lemon curd :icon_smile: am trying to lose weight though so prob not a good idea to be so tempting :roll:

Try the marrow and ginger jam recipe from the Hamilton boy's book. Very nice, we've used it as an alternative to mango chutney with popadoms.

Thanks for the making me realise the blindingly obvious ... I love marrow jam, haven't had any for years.
I have a courgette plant that is producing so many fruits that I'm giving them away left, right and centre.
It's actually a Green Bush marrow so I will let one fruit fill out and ripen and make some jam from it.

Funny how your mind gets in a rut, I also love rhubarb jam, I have 6 plants that grow like mad every year, but have never made any jam from them. :scratch: :roll:

We made rhubarb jam and relish last year both were really nice. All our rhubarb went into wine this year!

I make an oil pastry (flour, salt, olive oil and water), for the filling: onion, garlic, marrow and rice (uncooked) all sautéd in olive oil (salt & pepper and taste regularly). when cooked and cooled down, add a lot of parmesan and check for seasoning again. when you're happy with the taste, add an egg or two. I ended up with so much filling today that I froze half. great for later on in the year.
It's originally a big "tourte" recipe but works really well as individual pasties. Also lovely with courgettes, squash, pumpkins...

do you add water when cooking the rice and marrow etc? Do you add chopped egg or raw egg and cook it on till they are cooked?

no water: the rice will absorb the excess water in the marrow (2 to 3 handfulls for a big marrow). It will be completely cooked by the time you get them out of the oven!
eggs are added raw to the filling (which is why I do all the tasting before!) they cook when the pasties go in the oven, about 20-30min
