Courgettes!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Courgettes!

It's that time of year here again...I never buy a courgette because we have so many over summer that it seems ridiculous to spend money on them even if I fancy one........I'm not sure that this shouldn't be in 101 uses but here goes anyway...So far we've had:

Courgette 'meatballs' (Indian)
Courgette salad (invented)
Courgette and feta tortilla (invented)
Cougette fritters (told by a friend)
Courgette terrine (French and Australian versions)
Stuffed courgettes (sort of invented)
Courgettes with tomatoes and cheese (Mexican)
Courgette loaf (American)
Courgettes as a side dish (oh so many times)
Courgette in a summer veg quiche (invented)
Courgettes moussaka (Greek, last night very tasty)

Anyone have any more courgette recipes? Just to wring the changes :lol:

For a really simple dish I put some sweetcorn, butter and courgettes in the microwave for a couple of mins.


I would like to hear how to make the courgette loaf sound interesting.

Cougette and carrot pasta (invented)
Several courgette and tomato based pasta sauces (Various Italian)

What about the courgette flowers, stuffed with cheese, dipped in flour and fried - does that count?

Gary Rhodes does a courgette spaghetti with long thin strips of courgette used as a pasta - he does it under an OTT tower of stuff but it would proably work quite well with a cheese and mushroom sauce or similar.

And on the same theme you could use courgette slices instead of lasagne sheets or to roll around stuffing instead of rigatoni

Oh shit! (can I say that?) I've just turned male!!!!!!!!!!!!!!!! it's all a bit scary and now my sexual identity is really confused...don't get into bed with me tonight..........I was just getting used to being female...plump and middle aged which is argueably quite accurate and now this :shock:
Anyway back to courgettes....all that wrapping stuff to me smacks of side dish or moussaka type combinations........so sorry not good enough!

Recipe for courgette loaf 'zucchini bread' taken from 'llamas on the trail, a packer's guide'
I have a cup measure so I use it don't know what the weights are...
2-3 medium loaves, 1 large and 1 small loaf or 36 muffins
2 cups zucchini grated (the beloved courgette)
3 eggs
1 cup sugar
1 cup oil
1/2 teaspoon salt
2 teaspoon cinnamon
1 teaspoon baking soda (I thought this mean't bicarb)
1/2 teaspoon baking powder
3 cups flour
1/2 cup nuts
3 teaspoon vanilla..(I leave this out or use vanilla sugar or a couple of drops of essence)
optional: raisins/apple slices or oat bran
Beat eggs, sugar, oil, vanilla, salt, cinnamon, soda, baking powder and flour. Mix well add zucchini and nuts. Add optional ingredients, if desired.
Pour batter into greased loaf pans. Bake 40-60 mns at 350o F (I do this at 200-225c). Freezes and travels well............

There you go I reckon courgettes are good in any carrot cake recipe as well

Baby courgettes (no more than three inches long) are great raw. Just pick and eat! If a little bigger then cut into chunks and dip into vinegar sweetened with honey (or use balsamic vinegar) then leave in the fridge for a few hours and eat raw, sprinkled with toasted sesame seeds. Yummm!
