The dark side of leeks, lettuce etc.
Did you know the dark green bits of leeks, lettuce etc, are by far healthiest? Iceberg lettuce, for instance, has very few nutrients: the darker types are much better for us.
So if you throw away the leek tops, you are wasting a valuable source of, amongst others, beta-carotene and potassium. If you and your stomach are used to eating only the light parts, just go up a bit higher up the stem every time you use them. Or put the greens, finely cut, in soups and the like.

Never understood using only the white part of leeks, your right the tops make a lovely addition to leek and potato soup and improve the colour

I enjoy the stems on broccoli (calebresse) too but darn shops cut them off mostly round here
