Easy tomato & cottage cheese spaghetti

Easy tomato & cottage cheese spaghetti

I want to share this very easy recipe with you:
Quantities based on two people

I can tinned tomatoes (or fresh if you've a glut)
1 small tub cottage cheese
Tomato puree - a big squirt or two
salt and black pepper
fresh chives
fresh garlic is optional - one or two cloves crushed
olive oil

Get your spaghetti pan going and add a pinch of salt, when water is boiling add your spaghetti - enough for two people.
In another saucepan, cook the garlic till soft, add tomatoes, cottage cheese and tomato puree, cook for a couple of minutes but longer if you like, poor over hot spaghetti, toss through and sprinkle with chives and black pepper, we serve with bread to mop up extra sauce. We find it quick, cheap and delicious, I hope you do too. I think I saw this recipe years ago on the back of a cottage cheese tub.

cheers greenbean, might have to wait a while until I try it. My girlfriend does not like cottage cheese or spagetti! Mind you I am sure that I cold adapt it slightly perhaps using marsapone and fusselli or something.
