Well, you look in the fridge, there's a few veg but mainly ONIONS. What to do? Well, here's something really tasty I tried the other night.

You can serve these babies with anything and even eat them cold. Yeah ~ there were a few left in the pan, late at night, just lookin' at me. They just had to go. Know what I mean?

6 (or more if you have a glut) Onions Peeled ~ Red, white or whatever.
50 Ml Water
Olive Oil
50 Ml Balsamic Vinegar.

Preheat oven to Gas 5 (Sorry don't know the other heating 'F's and 'C's.)

Roll the onions in a little oil, place them in a shallow dish and cook them for about an hour uncovered in the oven, until soft.

Take out and leave to one side.

Put Water and vinegar into a pan bring to the boil then simmer for about 3 mins. Pour the onions into the pan and coat them in the vinegar sauce.

EAT.

Great with veggie burgers, meaty things (like very expensive 'reduced' lamb chops that I found the other day) and mashed spuds.

I reckon that even with a salad you won't be disappointed.

Mate! that sounds great, unfortunately onions result in life threatening flatulence in my case :shock:

Go and eat them and spend the evening by yourself.
