Anyone got recipes for rosehips?
Collected a lot whilst out walking yesterday. Have got a recipe for syrup but just wondered if there was anythng else to do with them.

well........as an evil schoolboy, I used to slice them open, and leave them in the sun or on a radiator to dry, then you carefully scrape the innards out - the best itching powder known to man!

U can make wine with them
My parents B&B in the beautiful French Vendee http://bed-breakfast-vendee.mysite.orange.co.uk/
Halve, deseed and dry them. Keep over winter to make rosehip soup.
0.8 litres dried rosehips (1 litre fresh halved and deseeded)
2 litres water
Crush dried rosehips, boil until soft.
Make pulp by pressing through colander.
Measure plup - dilute with water if necessary.
For each liter of pulp add:
1-2 tablespoons of sugar (or to taste really, this is just a guide line.)
1 table spoon potato starch
Return pulp to pot.
Add the sugar
Mix potato starch with some cold water and stir in to thicken soup while bringing it back up to a boil.
Serve hot or cold.
Best enjoyed as comfort food when you're suffering a cold or sore throat - hot with a big dollop of vanilla icecream slowly melting in the bowl. It's the Swedish version of chicken soup really. :)

I feel I should repeat the warning that I have seen often WRT rosehips - do not consume any of the tiny the hairs on the seeds inside the hips. Some books and sites go so far as describing it as 'dangerous' to do so. They can certainly be an extremely unpleasant irritant to the skin.
